Kitchen order ticket (KOT)
A kitchen order ticket (KOT) is a printed or on-screen slip that tells the kitchen which items to prepare for an order, and for which table or customer.
The KOT is the kitchen's copy of an order. It lists the items, quantities and any special requests, plus the table or customer number and the time the order was sent. Cooks work from it, and the pass uses it to check that a plate is complete before it goes out.
The term KOT is common in Nepal, India and the rest of South Asia, and many venues print one for each section of the kitchen on a small receipt printer. The bill is a separate document: a KOT usually carries no prices and is never given to the guest.
Ticket handling matters when an order changes. A good system prints only the new items on the next ticket, marks reprints clearly, and never sends the same item twice, so the kitchen does not cook a dish two times.
Example
At a momo restaurant in Pokhara, a waiter confirms a round for table 6: two plates of buff momo and a lemon soda. One KOT prints for the kitchen with the momos and another for the bar with the soda. When the table adds a plate later, only the new plate prints.
KalasOS specifics
KalasOS opens kitchen order tickets as PDFs for 80 mm or 58 mm paper, one per kitchen station, and you print them from the browser. Each ticket shows the station, KOT number, time, table and item notes, with no prices. Each item prints once, and reprints are marked REPRINT. Turn on "Open the KOT after Confirm Order" in POS Settings to open the ticket as soon as staff confirm an order. Devanagari text prints as "?".
